Homemade Chicken Noodle Soup

Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups uncooked egg noodles
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let the soup simmer for 10 minutes.
- Stir in the cooked chicken, uncooked egg noodles, and dried thyme. Simmer for another 10-12 minutes, or until the noodles are tender.
- Season the soup with salt and pepper to taste.
