Ingredients:

- 1 tablespoon olive oil

- 1 onion, diced

- 3 carrots, peeled and sliced

- 3 celery stalks, sliced

- 2 cloves garlic, minced

- 8 cups chicken broth

- 2 cups cooked chicken, shredded

- 2 cups uncooked egg noodles

- 1 teaspoon dried thyme

- Salt and pepper to taste

- Fresh parsley, chopped (for garnish)


Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
  2. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let the soup simmer for 10 minutes.
  4. Stir in the cooked chicken, uncooked egg noodles, and dried thyme. Simmer for another 10-12 minutes, or until the noodles are tender.
  5. Season the soup with salt and pepper to taste.
  6. Serve the homemade chicken noodle soup hot, garnished with chopped fresh parsley for added flavor.
